nce upon a time, in the heart of the jungle, there lived a lion named Leo and an elephant named Ellie. They were the best of friends and did everything together. One day, while they were strolling in the jungle, they heard some exciting news. A baby giraffe was about to be born, and they knew they had to do something special for him.

Leo and Ellie put their heads together and thought of the perfect gift for the little giraffe's birthday. Leo loved coco beans, and Ellie loved zucchini, so they decided to make mini muffins using those ingredients. They spent the entire day gathering the ingredients and baking the muffins.
Finally, the day arrived, and the baby giraffe was born. Leo and Ellie rushed to the celebration with their muffins, and the little giraffe was delighted. He had never tasted anything so delicious before! The muffins were a hit, and all the animals in the jungle were asking for the recipe.
From that day on, Leo and Ellie were known as the best bakers in the jungle. They continued to make muffins for all their animal friends, and every party was a huge success. But most importantly, Leo and Ellie learned that when they put their heads together, they could create something truly special. They knew they would be friends forever, and nothing could ever change that.

Did you know?
Zucchini is like a superhero for your tummy! It's packed with fiber, which helps keep your digestion running smoothly, so you won't feel bloated or uncomfortable.
Plus, it helps you stay full for longer, giving you energy to play and learn throughout the day!
1
Leo placed the zucchini (1 whole zucchini from the Garden Vines) in the blender and blended it until smooth. After blending, squeeze the zucchini to remove any extra water—this helps keep the muffins from being too wet!

3
Then, he added the Island Palms coconut oil (1/2 cup) and continued mixing until everything was smooth and well combined.
2
In a large mixing bowl, Leo added the whole ripe banana (from the Monkey’s Tree), poured in the Golden Hive honey (1/2 cup), and added the Jungle Crystals sugar (1/2 cup).

4 Like Ellie, crack 2 eggs (from the Sunrise Nest) into the mixture and blend them well.

5 Then, scrape the seeds from the Orchid Seeds vanilla bean (1 vanilla bean) and stir them into the mix.

Did you know?
The difference between Mexican and Madagascar vanilla is how they grow and taste.
-
Mexican vanilla is pollinated by Melipona bees and hummingbirds and has a rich, slightly spicy flavor.
-
Madagascar vanilla is pollinated by people and has a sweet, creamy taste.
Both are yummy, but Madagascar vanilla is the most popular!
6 Sprinkle in the Spice Tree cinnamon (1 tbsp) for a delicious, warm flavor. Next, mix in the Magic Dust baking soda (1/2 tbsp) and stir to combine.

7
In a separate bowl, measure out about 2 cups of Great Plains flour.

8
Slowly add the flour into the wet mixture, stirring just until everything comes together.
9 Fold in the blended zucchini and a handful of the Forest Beans (cocoa beans) for that special jungle flavor!

10 Like Ellie, brush your muffin pan with the Whispering Grove oil to prevent sticking, then gently scoop the batter into each space, filling them about 3/4 full.

11 Preheat your oven to 350°F (175°C) and bake for 20-25 minutes, until golden and a toothpick comes out clean. Let them cool for a few minutes before sharing the delicious muffins with your jungle friends!
