Lentil Soup

Once upon a time the was a little girl named Lily, who loved cars. She was excited for the annual toy car racing competition in her small town. She had spent a whole year perfecting her car. However, on the day of the race, Lily fell sick with a fever and was unable to leave her bed. She was heartbroken at the thought of missing the race.

Lily's friends knew how much the race meant to her and decided to make her a healthy soup to give her energy and help her get better. Each friend brought ingredients for the soup, and they all hurried to Lily's house to start cooking. Lily's mom helped them put everything together, and soon the delicious smell of soup filled the house. Lily ate the soup and immediately felt stronger. Her fever went down, and she was filled with energy. She was grateful to her friends for their thoughtful gesture.

The race was about to start, and Lily's friends helped her put on her racing suit and get ready. She climbed into her car, and her friends cheered her on. She felt strong and ready to race, all thanks to the soup her friends had made for her. The race was tough, but Lily didn't care about winning. She was just happy to be there and to be able to race. As she crossed the finish line, she had the biggest smile in town. Her friends cheered and hugged her, and Lily knew that she had the best friends in the world.

 

From that day on, Lily knew that she could always count on her friends to be there for her. And every year, when the toy car race came around, she remembered the day her friends made her soup and how it gave her the energy to race. She knew that she had the best friends in the world and that no sickness or setback could keep her down for long.

Recipe

Ingredients
  • 2 eggs

  • 2 cups of milk (or heavy cream for more indulgent blini)

  • 1T sugar

  • 1/2t salt

  • approx. 2 cups of flour 

  • 2T canola or vegetable oil + more for oiling the pan

1. Break 2 eggs. It's ok to make some mess.

Slowly start stirring in flour. Start with a cup, and stir a little more at a time until you get a runny batter but not as thin as milk – don’t stress about this step, you can always adjust as you go!

Preheat a 10" non-stick pan over medium heat and rub with oil (I pour some in a little cup and dip a paper towel in, then run it around the pan before making each blin)

Use a 1/4 cup or 1/3 cup measurer to scoop the batter into the middle of the pan, then quickly tilt the pan in a circular motion until the batter spreads to cover the pan surface. It should be a very thin layer. Note: The first few blini may be experimental. Try the 1/4 cup and see if the batter covers the pan. Does it easily slide around the pan? If it’s too thick, add some milk/cream to the batter. If it’s too thin, add more flour to the batter.

From that day on, Lily knew that no matter what happened, she could always count on her friends to be there for her. And every year, when the toy car race came around, she remembered the day her friends made her soup and how it gave her the energy to race. She knew that she had the best friends in the world.
