
Rice Pudding
Once upon a time in a lush green forest, there lived a cute baby panda. One sunny day, the baby panda was playing with its mom, but soon it got separated from her. The little panda wandered around the forest, but couldn't find its mom. To make things worse, it stumbled upon a sharp rock and injured its paw.
As the baby panda hobbled along, it heard a strange sound coming from a nearby tree. It was a woodpecker, pecking away at a trunk. The woodpecker noticed the panda's injured paw and asked if it needed help. The panda, feeling scared and alone, didn't know what to do, but the woodpecker was friendly and offered to help.
The woodpecker took the panda to its nest and made it comfortable. The woodpecker was a great cook and offered the panda some rice pudding. It started mixing rice, milk, egg yolk, flour, vanilla seeds, and cinnamon. It mixed them all up and cooked it to perfection. The panda had never tasted anything like it and licked the bowl clean. The woodpecker was pleased and said, "You can stay here as long as you like." But the woodpecker knew that the baby panda missed its mom and wanted to help it find her. So, it took to the skies and flew around the forest in search of the baby panda's mom.
After a while, the woodpecker spotted the baby panda's mom and led her back to the nest. The baby panda was overjoyed to see its mom again, and the woodpecker was happy to have helped. The baby panda and its mom were reunited, and the woodpecker had made two new friends.

Recipe
Ingredients

2 eggs

2 cups of milk (or heavy cream for more indulgent blini)

1T sugar

1/2t salt

approx. 2 cups of flour

2T canola or vegetable oil + more for oiling the pan

1. Break 2 eggs. It's ok to make some mess.

Slowly start stirring in flour. Start with a cup, and stir a little more at a time until you get a runny batter but not as thin as milk – don’t stress about this step, you can always adjust as you go!

Preheat a 10" non-stick pan over medium heat and rub with oil (I pour some in a little cup and dip a paper towel in, then run it around the pan before making each blin)


Use a 1/4 cup or 1/3 cup measurer to scoop the batter into the middle of the pan, then quickly tilt the pan in a circular motion until the batter spreads to cover the pan surface. It should be a very thin layer. Note: The first few blini may be experimental. Try the 1/4 cup and see if the batter covers the pan. Does it easily slide around the pan? If it’s too thick, add some milk/cream to the batter. If it’s too thin, add more flour to the batter.



From that day on, the woodpecker and the panda would play and have fun together, and they always shared rice pudding as their favorite treat. The end.
